Triple Berry Pancakes

This is super simple, but it is my new favorite "special" breakfast. I bought a big bag of frozen mixed berries (blueberries, blackberries, and raspberries) from Sam's Club a while ago, and had been using it mostly for smoothies, or to eat with yogurt.

Then I remembered some yummy pancakes I'd had a few months ago with some frozen blueberries mixed into the batter, so I thought I'd try it with my mixed berries.  Oh my, it was SO good! I'm sure you've probably had blueberry pancakes before, but have you ever tried pancakes with raspberries and blackberries? It's seriously delicious.

I made them for breakfast on my baby's first birthday, and served them with whipped cream and syrup on top. That is my favorite way to eat them, but they are also really great with just the usual butter and syrup. These make a yummy pancake dinner, or Saturday morning breakfast!

Triple Berry Pancakes
from High Wire Living

1 batch of your favorite pancake recipe (I used Bisquick)
1 cup frozen mixed berries (more or less if desired)

Mix up pancake batter according to recipe instructions.  Stir in frozen berries.  You can thaw them first if you want, then stir them in, and it will make the batter turn a little purple and cook slightly faster.

Heat skillet to medium or medium-high heat, and spray with cooking spray. Scoop one quarter to one third cup portions onto skillet and cook until batter is cooked through and pancakes are golden.

Top with your favorite toppings and enjoy!
